Beef and Spinach Stir-Fry

 


Ingredients:

1 lb flank steak, thinly sliced against the grain

1 tbsp soy sauce

1 tbsp cornstarch

1 tsp sesame oil

1 tsp ground ginger

2 tbsp canola oil

Red chili peppers, sliced

1 onion, thinly sliced

3 cloves garlic, minced

5 oz fresh spinach

Instructions:

In a small bowl, whisk together soy sauce, sesame oil, cornstarch, and ginger until smooth.

Add sliced beef to the bowl and marinate for at least 15 minutes.

Heat 1 tbsp canola oil in a wok or large skillet over medium-high heat.

Add the marinated beef and stir-fry for 3 minutes or until browned. Transfer to a plate.

Add the remaining oil to the skillet and stir-fry the onion, red chili, and garlic for 3 minutes or until softened.

Return the beef to the skillet.

Add the spinach and stir-fry until wilted.

Serve over rice or noodles.
