Noodles with Minced Pork and Green Beans Recipe

Ingredients:

- 8 oz dried noodles (your choice – egg noodles, wheat noodles, etc.)

- 1 lb ground pork

- 1 cup green beans, trimmed and cut into 1-inch pieces

- 1/2 cup onion, chopped

- 2 cloves garlic, minced

- 1 tablespoon soy sauce

- 1 tablespoon oyster sauce (optional, adds umami)

- 1 tablespoon rice vinegar

- 1 teaspoon sesame oil

- 1 teaspoon cornstarch

- 1 tablespoon cooking oil

- 1-2 small red chilies, thinly sliced (optional, for spice)

- 2 tablespoons chopped scallions (for garnish)

Instructions:

1. Cook the noodles: Cook the noodles according to package directions. Drain and set aside.

2. Prepare the sauce: In a small bowl, whisk together the soy sauce, oyster sauce (if using), rice vinegar, sesame oil, and cornstarch. Set aside.

3. Cook the pork: Heat the cooking oil in a large skillet or wok over medium-high heat. Add the ground pork and cook, breaking it up with a spatula, until browned. Drain off any excess fat.

4. Add aromatics and green beans: Add the onion and garlic to the skillet and sauté for about 1 minute, until fragrant. Add the green beans and stir-fry for 2-3 minutes, until slightly tender-crisp.

5. Combine and simmer: Add the cooked noodles to the skillet. Pour the sauce over the noodles and pork mixture. Stir to combine. Cook for 2-3 minutes, or until the sauce has thickened and the noodles are heated through.

6. Add chili (optional): If using, add the sliced red chilies during the last minute of cooking.

7. Garnish and serve: Garnish with chopped scallions. Serve immediately.

Tips and Variations:

- You can add other vegetables, such as mushrooms, carrots, or bell peppers.

- For a spicier dish, add more chilies or a dash of chili garlic sauce.

- If you prefer a thicker sauce, use more cornstarch.

- Toasted sesame seeds make a nice garnish.

- Feel free to adjust the amount of soy sauce, oyster sauce, and rice vinegar to your preference.
