Instructions:
1. Cook the noodles: Cook the noodles according to package directions. Drain and set aside.
2. Prepare the sauce: In a small bowl, whisk together the soy sauce, oyster sauce (if using), rice vinegar, sesame oil, and cornstarch. Set aside.
3. Cook the pork: Heat the cooking oil in a large skillet or wok over medium-high heat. Add the ground pork and cook, breaking it up with a spatula, until browned. Drain off any excess fat.
4. Add aromatics and green beans: Add the onion and garlic to the skillet and sauté for about 1 minute, until fragrant. Add the green beans and stir-fry for 2-3 minutes, until slightly tender-crisp.
5. Combine and simmer: Add the cooked noodles to the skillet. Pour the sauce over the noodles and pork mixture. Stir to combine. Cook for 2-3 minutes, or until the sauce has thickened and the noodles are heated through.
6. Add chili (optional): If using, add the sliced red chilies during the last minute of cooking.
7. Garnish and serve: Garnish with chopped scallions. Serve immediately.
