Ingredients:
• 1.895 kilograms pork knuckles
• 1 cup sliced onion
• 6 cloves garlic
• ¾ cup vinegar
• ½ cup sugar
• ½ cup soy sauce
• 1 bottle mang tomas sauce
• whole peppercorns
• bay leaves
• water
• cooking oil
• salt and pepper
Methods:
Put salt on the pork knuckles and rub well.
Wash and drain.
In a heated pan with oil, saute the onion until translucent and saute garlic for 20 seconds.
Add the pork knuckles, saute for 5 minutes over medium heat. Add soy sauce and pepper, stir.
Cover and cook for 5 minutes. Stir to cook the other side and continue cooking for 5 minutes.
Add bay leaves, whole peppercorns, water and vinegar. Don't stir & let it boil. Then stir when it boils. Continue cooking for 20 minutes or until tender. Add the lechon paksiw sauce and sugar, stir to dissolve. Cover and simmer for 10 minutes. Reduce heat over low. Continue cooking for 10 more minutes or until the sauce has thickened.
