Ingredients:
• 1 pound beef sirloin, thinly sliced against the grain
• 2 large ripe tomatoes, cored and cut into wedges
• 4 large eggs, beaten
• 2 tablespoons vegetable oil, divided
• 1 tablespoon soy sauce
• 1 tablespoon cornstarch
• 1 teaspoon sugar
• 1/2 teaspoon salt
• 1/4 teaspoon white pepper
• 2 cloves garlic, minced
• 1 green onion, chopped (optional)
Instructions:
1. Prepare the Beef:
◦ In a bowl, mix the sliced beef with soy sauce, cornstarch, sugar, salt, and white pepper.
◦ Marinate for at least 15 minutes.
2. Scramble the Eggs:
◦ Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat.
◦ Pour in the beaten eggs and scramble until just set but still slightly soft.
◦ Remove the eggs from the wok and set aside.
3. Stir-Fry the Beef:
◦ Add the remaining 1 tablespoon of vegetable oil to the wok.
◦ Add the minced garlic and stir-fry until fragrant (about 30 seconds).
◦ Add the marinated beef and stir-fry until browned and cooked through (about 2-3 minutes).
◦ Remove the beef from the wok and set aside.
4. Combine and Sauté:
◦ Add the tomato wedges to the wok and stir-fry until they soften slightly and release their juices (about 2-3 minutes).
◦ Return the cooked beef and scrambled eggs to the wok.
◦ Stir everything together to combine.
5. Serve:
◦ Garnish with chopped green onion.
◦ Serve hot with rice or noodles.
