Shrimp with Tomato and Egg Recipe

 


Ingredients:

- 1 pound large shrimp, peeled and deveined

- 3 large eggs, beaten

- 2 ripe tomatoes, diced

- 2 cloves garlic, minced

- 2 tablespoons cooking oil

- 1 tablespoon soy sauce

- 1 tablespoon ketchup

- Salt and pepper to taste

- Optional: chopped green onions for garnish

Instructions:

1. Prepare the Shrimp: Marinate the shrimp with a pinch of salt, pepper, and a dash of soy sauce for about 10 minutes.

2. Scramble the Eggs: Heat 1 tablespoon of cooking oil in a pan over medium heat. Pour in the beaten eggs and scramble until cooked but still slightly soft. Remove from the pan and set aside.

3. Sauté Garlic and Tomatoes: Add the remaining 1 tablespoon of cooking oil to the pan. Sauté the minced garlic until fragrant, then add the diced tomatoes. Cook until the tomatoes soften and release their juices, about 5-7 minutes.

4. Cook the Shrimp: Add the marinated shrimp to the pan with the tomatoes. Cook until the shrimp turns pink and is cooked through, about 3-5 minutes.

5. Combine Ingredients: Return the scrambled eggs to the pan with the shrimp and tomatoes. Stir in the soy sauce and ketchup. Mix well to combine all ingredients.

6. Season and Serve: Season with salt and pepper to taste. Garnish with chopped green onions, if desired. Serve hot with rice or noodles.
