Ingredients:
1. - 5 lbs pork ribs, cut into individual pieces
- 2 tablespoons vegetable oil
- 6 cloves garlic, minced
- 1 inch ginger, minced
- 2 tbsp chili flakes(adjust to your spice preference)
- 2 tablespoons soy sauce
- 1 tablespoon dark soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1 cup chicken broth or water
- 1 teaspoon sesame oil
- Chopped scallions or green peppers for garnish
Instructions:
1. Blanch the Ribs: Place the pork ribs in a pot, cover with cold water, and bring to a boil. Cook for 5 minutes. Drain and rinse the ribs thoroughly to remove any impurities.
2. Sear the Ribs: Heat vegetable oil in a large wok or pot over medium-high heat. Add the blanched ribs and sear until lightly browned on all sides. Remove the ribs from the wok and set aside.
3. Sauté Aromatics: In the same wok, add garlic, ginger, and chili flakes. Sauté , about 1 minute.
4. Return Ribs: Return the seared ribs to the wok. Stir well to coat the ribs with the spicy mixture.
5. Braise: Add soy sauce, dark soy sauce, rice vinegar, and sugar. Stir to combine. Pour in chicken broth or water until the ribs are almost covered. Bring to a boil, then reduce heat to low, cover, and simmer for 1. 5-2 hours, or until the ribs are tender and the sauce has thickened.
6. Adjust and Thicken: Remove the lid and increase the heat to medium-high. If the sauce is too thin, continue to cook until it reaches your desired consistency. Be careful not to burn the sauce.
7. Finish: Stir in sesame oil.
8. Garnish and Serve: Transfer the spicy pork ribs to a serving plate. Garnish with chopped scallions or green peppers. Serve hot with steamed rice.
