Ingredients
4 boneless, skinless chicken breasts or thighs
¼ cup creamy peanut butter
¼ cup soy sauce
2 tablespoons rice vinegar
2 tablespoons honey
½ cup coconut milk (or regular milk)
2 cloves garlic, minced
1 tablespoon fresh ginger, minced
2 tablespoons vegetable oil
Sriracha, to taste (optional)
Chopped peanuts and cilantro for garnish
Instructions
1_Prepare all ingredients by mincing garlic and ginger.
2_Heat vegetable oil in a skillet over medium-high heat. Add chicken and cook for about 5-7 minutes per side until browned and cooked through. Remove from skillet.
3_In the same skillet, reduce heat to medium and sauté garlic and ginger until fragrant (1-2 minutes).
