Ingredients:
• 1 lb thinly sliced beef
• 2-3 ripe tomatoes, diced
• 3-4 eggs
• 2 cloves garlic, minced
• 1 green onion, chopped
• 1 tbsp soy sauce
• 1 tbsp cooking wine
• 1 tsp sugar
• Salt and pepper to taste
• Cooking oil
Instructions:
1. Marinate the Beef: In a bowl, mix the beef with soy sauce, cooking wine, and a pinch of pepper. Let it marinate for about 15-20 minutes.
2. Scramble the Eggs: In a separate bowl, whisk the eggs with a little salt. Heat some oil in a pan, pour in the eggs, and scramble until just set. Remove from the pan and set aside.
3. Sauté Aromatics: Add more oil to the pan and sauté the minced garlic until fragrant.
4. Cook the Beef: Add the marinated beef to the pan and stir-fry until it changes color and is cooked through. Remove from the pan and set aside.
5. Cook the Tomatoes: In the same pan, add the diced tomatoes and stir-fry until they soften and release their juices, forming a sauce. Add sugar, salt, and pepper to taste.
6. Combine Ingredients: Add the cooked beef and scrambled eggs back into the pan with the tomato sauce. Stir well to combine and heat through.
7. Garnish and Serve: Garnish with chopped green onion and serve hot with rice or noodles.
